HOW TO COOK PERFECT JAPANESE RICE i think 360cc is the smallest amount of cooking rice. i can't cook tasty rice if it's less than that. if you think you cooked too much rice, wrap one portion of rice with cling film and put in a freezeer (not in a fridge). i use a le creuset' pot with a heavy lid (ø19cm, H8.5cm) to cook 360-540cc of rice. i can't cook more than 540cc with this pot. you have to think how much you can cook with your pot! good luck! put rice in a pan/bowl with plenty of cold water. rinse rice very quickly for the first time (don't want rice to absorb dirty water). wash rice until water is kind of clean. drain the water well. place the rice in a pan, cover with water 10% more than rice) and leave to soak for 30mins (1hour in winter time). cover with a lid and turn the heat on a medium flame. bring the water just to boiling point (don't open the lid! the rice carry on cooking in the steam once it has absorbed all the water), then turn the heat down as low as it will go. after 11mins, turn the heat off, leave to stand for 15mins. wet the wooden or plastic spatula, take the rice apart from the pan (1 round trip) and gently nudge the rice aprt from the bottom of the pan (putting the air helps un-wanted watter goes off). see the animation serve the rice in a bowl with 3 strokes. make a nice airy mountain. could be nice to eat hot or cold. |

there are so many japanica rice selling in london. some is made in america,
in italy and of course in japan. I don't recommend particular bland which i can buy in london. they are all same to me somehow. if your friends recommend some bland, listen to them! or just try a few brands and you will find your favorite. i bought these rice (see pics) in london. The price might be different now. we eat a lot of rice in japan, but they harvest only once a year. maybe same as another countries? so you can try to avoid the old rice and eat the new seasoned rice. it's much tastier. |
